Ingredients

  • 100 g Apple
  • 10 g Apple Cider Vinegar
  • 60 g Bacon
  • 1 g Black Pepper
  • 90 g Carrot
  • 8 g Dijon mustard
  • 12 g Maple Syrup
  • 12 g Olive oil
  • 80 g Pearl Barley
  • 20 g Red Onion
  • 2 g Salt
  • 50 g Spinach
  • 15 g Sunflower seeds

Instructions

  1. Cook the pearl barley in salted water until tender, then drain well and let it cool slightly.
  2. While the barley cooks, bake or pan-cook the bacon until crisp, then chop it into bite-size pieces.
  3. Roast or sauté the carrot until lightly caramelized and tender.
  4. Whisk together the maple syrup, Dijon mustard, apple cider vinegar, olive oil, salt, and black pepper to make the dressing.
  5. In a large bowl, combine the barley, spinach, carrot, diced apple, red onion, sunflower seeds, and bacon.
  6. Add the dressing and toss until everything is evenly coated.
  7. Divide into meal-prep containers and chill before serving.
