Ingredients
- 100 g Apple
- 10 g Apple Cider Vinegar
- 60 g Bacon
- 1 g Black Pepper
- 90 g Carrot
- 8 g Dijon mustard
- 12 g Maple Syrup
- 12 g Olive oil
- 80 g Pearl Barley
- 20 g Red Onion
- 2 g Salt
- 50 g Spinach
- 15 g Sunflower seeds
Instructions
- Cook the pearl barley in salted water until tender, then drain well and let it cool slightly.
- While the barley cooks, bake or pan-cook the bacon until crisp, then chop it into bite-size pieces.
- Roast or sauté the carrot until lightly caramelized and tender.
- Whisk together the maple syrup, Dijon mustard, apple cider vinegar, olive oil, salt, and black pepper to make the dressing.
- In a large bowl, combine the barley, spinach, carrot, diced apple, red onion, sunflower seeds, and bacon.
- Add the dressing and toss until everything is evenly coated.
- Divide into meal-prep containers and chill before serving.
