Ingredients

  • 1.5 g Black Pepper
  • 1.25 g Dried Thyme
  • 15 g Fresh Rosemary
  • 2.25 g Garlic
  • 1.25 g Garlic Powder
  • 35 g Lemon
  • 8 g Olive oil
  • 40 g Onion
  • 1.25 g Paprika
  • 3 g Salt
  • 250 g Whole Chicken

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels. Rub olive oil over the chicken and season with salt, pepper, paprika, garlic powder, and dried thyme.
  3. Place the lemon halves, onion quarters, garlic cloves, and rosemary sprigs inside the chicken cavity.
  4. Place the chicken breast-side up in a roasting pan or baking dish. Optionally, tie the legs together with kitchen twine.
  5. Roast the chicken in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) at the thickest part of the breast and thighs.
  6. Remove the chicken from the oven and let it rest for 10 minutes before carving. Serve with roasted vegetables or your favorite side dishes.
