Ingredients

  • 140 g Black Bean
  • 1 g Black Pepper
  • 12 g Chipotle in Adobo
  • 8 g Cilantro
  • 120 g Corn kernel
  • 2 g Cumin
  • 6 g Garlic
  • 70 g Greek Yogurt
  • 18 g Lime juice
  • 10 g Olive oil
  • 60 g Red Onion
  • 180 g Rice
  • 2 g Salt
  • 170 g White Shrimp

Instructions

  1. Preheat oven to 220°C. Spread corn and sliced red onion on a sheet pan, toss with half the olive oil, salt, and pepper, then roast 12 minutes.
  2. Make chipotle yogurt: blend Greek yogurt with chipotle in adobo, half the lime juice, and a pinch of salt.
  3. Pat shrimp dry. Toss with cumin, minced garlic, remaining olive oil, and a pinch of salt and pepper.
  4. Heat a skillet over medium-high and cook shrimp 1–2 minutes per side until just opaque.
  5. Warm and drain black beans, then season with a pinch of salt and the remaining lime juice.
  6. Stir chopped cilantro into the cooked rice.
  7. Meal prep: add cilantro-lime rice to a container, then layer black beans, roasted corn and onion, and chipotle shrimp. Pack chipotle yogurt on the side or on top.
