Ingredients
- 1 g Black Pepper
- 1 g Cayenne Pepper
- 1 g Dried Oregano
- 3 g Garlic Powder
- 160 g Green Bean
- 12 g Lemon juice
- 14 g Olive oil
- 2 g Onion powder
- 4 g Paprika
- 2 g Salt
- 220 g Sweet Potato
- 170 g White Shrimp
Instructions
- Preheat oven to 220°C and line a sheet pan.
- Cut sweet potato into 2 cm cubes. Toss with half the olive oil, half the salt, paprika, onion powder, garlic powder, oregano, and pepper.
- Roast sweet potato 18 minutes, flipping once halfway.
- Meanwhile, toss green beans with remaining olive oil and remaining salt.
- Add green beans to the pan and roast 7 minutes.
- Pat shrimp dry and toss with cayenne, a pinch more paprika if desired, and lemon juice.
- Heat a skillet over medium-high and cook shrimp 1–2 minutes per side until just opaque.
- Meal prep: portion sweet potato and green beans, then add shrimp on top. Cool, seal, and refrigerate.
