- 115 g Bell Pepper
- 1.25 g Black Pepper
- 93.75 g Carrot
- 2.25 g Garlic
- 227 g Lean ground beef
- 9.2 g Olive oil
- 1.25 g Paprika
- 170 g Potato
- 1 g Salt
- 113.5 g Tomato
- 93.75 g Yellow Onion
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan.
- Peel and dice the potatoes and carrots into small cubes. Slice bell peppers, onions, and tomatoes.
- In a large skillet, brown the lean ground beef with minced garlic over medium heat until no longer pink. Drain excess fat if needed.
- Add the browned beef, chopped vegetables, olive oil, salt, pepper, and paprika to the baking dish. Mix thoroughly to combine.
- Spread the mixture evenly and bake for 35–40 minutes, stirring once halfway through, until the vegetables are tender and slightly golden.
- Let cool slightly before dividing into containers for storage.
