Ingredients

  • 6.75 g BBQ Spice Mix
  • 50 g Bell Pepper
  • 40 g Corn kernel
  • 1.5 g Garlic
  • 13.5 g Olive oil
  • 170.1 g Pork chop
  • 45 g Rice
  • 0 g Salt

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rub pork chops with BBQ spice mix, salt and pepper on both sides.
  3. Heat 1 tbsp olive oil in a skillet over medium-high heat. Sear pork chops 2–3 minutes per side until browned.
  4. Transfer seared chops to a baking dish and bake for 12–15 minutes or until internal temp reaches 145°F (63°C).
  5. Cook rice according to package instructions. Once cooked, stir in corn kernels and 1 minced garlic clove.
  6. Slice bell peppers into strips. Sauté in a pan with 1 tbsp olive oil and a pinch of salt for 5–7 minutes until tender.
  7. Serve pork chops with sautéed peppers and corn rice.
