BBQ-Style Pork Chops with Bell Peppers and Corn Rice

Ingredients
- 6.75 g BBQ Spice Mix
- 50 g Bell Pepper
- 40 g Corn kernel
- 1.5 g Garlic
- 13.5 g Olive oil
- 170.1 g Pork chop
- 45 g Rice
- 0 g Salt
Instructions
- Preheat oven to 400°F (200°C).
- Rub pork chops with BBQ spice mix, salt and pepper on both sides.
- Heat 1 tbsp olive oil in a skillet over medium-high heat. Sear pork chops 2–3 minutes per side until browned.
- Transfer seared chops to a baking dish and bake for 12–15 minutes or until internal temp reaches 145°F (63°C).
- Cook rice according to package instructions. Once cooked, stir in corn kernels and 1 minced garlic clove.
- Slice bell peppers into strips. Sauté in a pan with 1 tbsp olive oil and a pinch of salt for 5–7 minutes until tender.
- Serve pork chops with sautéed peppers and corn rice.
