Ingredients
- 120 g Coconut Milk
- 15 g Curry Powder
- 45 g Dry Green lentils
- 2.25 g Garlic
- 4.25 g Ginger
- 113.5 g Ground beef
- 3.4 g Olive oil
- 30 g Onion
- 15 g Tomato Paste
Instructions
- Rinse and cook lentils according to package instructions until tender. Set aside.
- Dice the onion, mince the garlic, and grate the ginger.
- Heat olive oil in a large skillet or pot over medium heat.
- Add onion, cook until softened. Stir in garlic and ginger, cook 1 minute.
- Add ground beef, cook until browned and no longer pink. Drain excess fat.
- Stir in tomato paste and curry powder, cook 2 minutes to bloom spices.
- Add cooked lentils and coconut milk. Simmer 10–15 minutes to thicken and combine flavors.
- Adjust seasoning with salt and pepper to taste.
