Ingredients

  • 120 g Coconut Milk
  • 15 g Curry Powder
  • 45 g Dry Green lentils
  • 2.25 g Garlic
  • 4.25 g Ginger
  • 113.5 g Ground beef
  • 3.4 g Olive oil
  • 30 g Onion
  • 15 g Tomato Paste

Instructions

  1. Rinse and cook lentils according to package instructions until tender. Set aside.
  2. Dice the onion, mince the garlic, and grate the ginger.
  3. Heat olive oil in a large skillet or pot over medium heat.
  4. Add onion, cook until softened. Stir in garlic and ginger, cook 1 minute.
  5. Add ground beef, cook until browned and no longer pink. Drain excess fat.
  6. Stir in tomato paste and curry powder, cook 2 minutes to bloom spices.
  7. Add cooked lentils and coconut milk. Simmer 10–15 minutes to thicken and combine flavors.
  8. Adjust seasoning with salt and pepper to taste.
