Ingredients

  • 90 g Broccoli
  • 45 g Brown Rice
  • 75 g Carrot
  • 1.5 g Garlic
  • 7.5 g Ginger
  • 7.5 g Honey
  • 8.5 g Olive oil
  • 113.5 g Salmon fillet
  • 30.75 g Soy Sauce

Instructions

  1. Cook brown rice according to package instructions.
  2. Peel and slice the carrots into thin rounds.
  3. Cut the broccoli into florets.
  4. Mince the garlic cloves and grate the ginger.
  5. In a small bowl, mix soy sauce, honey, minced garlic, and grated ginger to create the teriyaki sauce.
  6. Place the salmon fillets in a shallow dish and pour half of the teriyaki sauce over them. Let marinate for 15 minutes.
  7. Heat 1 tbsp of olive oil in a skillet over medium heat. Add the marinated salmon fillets and cook for 4-5 minutes on each side until cooked through.
  8. In a separate pan, heat the remaining 1 tbsp of olive oil over medium heat. Add the sliced carrots and broccoli florets, and sauté for 5-7 minutes until tender-crisp.
  9. Drizzle the remaining teriyaki sauce over the cooked salmon fillets.
  10. Divide the brown rice, sautéed vegetables, and teriyaki salmon evenly into four meal prep containers.
