Ingredients
- 90 g Broccoli
- 45 g Brown Rice
- 75 g Carrot
- 1.5 g Garlic
- 7.5 g Ginger
- 7.5 g Honey
- 8.5 g Olive oil
- 113.5 g Salmon fillet
- 30.75 g Soy Sauce
Instructions
- Cook brown rice according to package instructions.
- Peel and slice the carrots into thin rounds.
- Cut the broccoli into florets.
- Mince the garlic cloves and grate the ginger.
- In a small bowl, mix soy sauce, honey, minced garlic, and grated ginger to create the teriyaki sauce.
- Place the salmon fillets in a shallow dish and pour half of the teriyaki sauce over them. Let marinate for 15 minutes.
- Heat 1 tbsp of olive oil in a skillet over medium heat. Add the marinated salmon fillets and cook for 4-5 minutes on each side until cooked through.
- In a separate pan, heat the remaining 1 tbsp of olive oil over medium heat. Add the sliced carrots and broccoli florets, and sauté for 5-7 minutes until tender-crisp.
- Drizzle the remaining teriyaki sauce over the cooked salmon fillets.
- Divide the brown rice, sautéed vegetables, and teriyaki salmon evenly into four meal prep containers.
