Ingredients

  • 90 g Bell Pepper
  • 20 g Carrot
  • 7.5 g Dijon mustard
  • 1.5 g Garlic
  • 11.25 g Honey
  • 13.5 g Olive oil
  • 227 g Pork Loin
  • 3 g Salt
  • 3.4 g Soy Sauce
  • 100 g Zucchini

Instructions

  1. Season the pork loin with salt and pepper. Preheat a skillet over medium heat with olive oil.
  2. Sear the pork loin on all sides until golden brown (about 8 minutes total). Remove and set aside.
  3. In a small bowl, mix honey, garlic, soy sauce, and Dijon mustard.
  4. Preheat the oven to 375°F (190°C). Place the pork loin on a baking tray, brush generously with the glaze, and bake for 25–30 minutes, basting halfway through, until the internal temperature reaches 145°F (63°C).
  5. While the pork roasts, heat a skillet with a drizzle of olive oil. Sauté bell pepper, zucchini, and carrot for 5–7 minutes until tender-crisp. Season with salt and pepper.
  6. Let the pork loin rest for 5 minutes before slicing. Serve with the sautéed vegetables and drizzle any remaining glaze on top.
