Seared Salmon with Herbed Yogurt Sauce

Ingredients
- 1.5 g Black Pepper
- 7.5 g Fresh Dill
- 1 g Garlic
- 120 g Greek Yogurt
- 15.75 g Lemon juice
- 9 g Olive oil
- 50 g Red Bell Pepper
- 170.1 g Salmon fillet
- 1.25 g Salt
- 75 g Zucchini
Instructions
- Preheat the oven to 400°F (200°C).
- Slice zucchini and red bell peppers into bite-sized pieces.
- Place the chopped vegetables on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and black pepper. Roast in the preheated oven for 20 minutes.
- While the vegetables are roasting, prepare the herbed yogurt sauce by mixing Greek yogurt, lemon juice, minced garlic, and chopped fresh dill in a bowl. Set aside.
- Heat the remaining 1 tablespoon of olive oil in a skillet over medium-high heat. Season the salmon fillets with salt and black pepper.
- Place the salmon fillets skin-side down in the skillet and sear for 4-5 minutes. Flip and cook for an additional 3-4 minutes until the salmon is cooked through.
- Remove the roasted vegetables from the oven.
- Serve each salmon fillet with a portion of roasted vegetables and a generous spoonful of herbed yogurt sauce on top.
