Seared Salmon with Herbed Yogurt Sauce

Ingredients

  • 1.5 g Black Pepper
  • 7.5 g Fresh Dill
  • 1 g Garlic
  • 120 g Greek Yogurt
  • 15.75 g Lemon juice
  • 9 g Olive oil
  • 50 g Red Bell Pepper
  • 170.1 g Salmon fillet
  • 1.25 g Salt
  • 75 g Zucchini

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice zucchini and red bell peppers into bite-sized pieces.
  3. Place the chopped vegetables on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and black pepper. Roast in the preheated oven for 20 minutes.
  4. While the vegetables are roasting, prepare the herbed yogurt sauce by mixing Greek yogurt, lemon juice, minced garlic, and chopped fresh dill in a bowl. Set aside.
  5. Heat the remaining 1 tablespoon of olive oil in a skillet over medium-high heat. Season the salmon fillets with salt and black pepper.
  6. Place the salmon fillets skin-side down in the skillet and sear for 4-5 minutes. Flip and cook for an additional 3-4 minutes until the salmon is cooked through.
  7. Remove the roasted vegetables from the oven.
  8. Serve each salmon fillet with a portion of roasted vegetables and a generous spoonful of herbed yogurt sauce on top.
