Ingredients

  • 3.5 g Cumin
  • 7.5 g Fresh parsley
  • 1.5 g Garlic
  • 120 g Greek Yogurt
  • 60 g Green Cabbage
  • 113.5 g Lean ground beef
  • 15.75 g Lemon juice
  • 8.4 g Olive oil
  • 3.5 g Paprika
  • 150 g Sweet Potato

Instructions

  1. Preheat oven to 400°F (200°C). Peel and cube sweet potatoes, toss with 1 tbsp olive oil, and roast for 25–30 minutes.
  2. In a bowl, mix ground beef with minced garlic, cumin, paprika, salt, and pepper. Form into meatballs.
  3. Bake or pan-sear meatballs until cooked through, about 20 minutes.
  4. Thinly slice green cabbage and toss with lemon juice and a pinch of salt.
  5. Mix Greek yogurt with lemon juice, parsley, and a touch of olive oil for the dressing.
  6. Assemble bowls with sweet potatoes, cabbage slaw, meatballs, and drizzle with yogurt sauce.
