Ingredients
- 3.5 g Cumin
- 7.5 g Fresh parsley
- 1.5 g Garlic
- 120 g Greek Yogurt
- 60 g Green Cabbage
- 113.5 g Lean ground beef
- 15.75 g Lemon juice
- 8.4 g Olive oil
- 3.5 g Paprika
- 150 g Sweet Potato
Instructions
- Preheat oven to 400°F (200°C). Peel and cube sweet potatoes, toss with 1 tbsp olive oil, and roast for 25–30 minutes.
- In a bowl, mix ground beef with minced garlic, cumin, paprika, salt, and pepper. Form into meatballs.
- Bake or pan-sear meatballs until cooked through, about 20 minutes.
- Thinly slice green cabbage and toss with lemon juice and a pinch of salt.
- Mix Greek yogurt with lemon juice, parsley, and a touch of olive oil for the dressing.
- Assemble bowls with sweet potatoes, cabbage slaw, meatballs, and drizzle with yogurt sauce.
