Maple Mustard Glazed Salmon with Quinoa and Roasted Vegetables

Ingredients
- 3 g Black Pepper
- 15 g Dijon mustard
- 0.75 g Garlic
- 4.5 g Lemon juice
- 6.4 g Maple Syrup
- 11.25 g Olive oil
- 40 g Quinoa
- 170.1 g Salmon fillet
- 3 g Sea Salt
- 75 g Sweet Potato
Instructions
- Preheat the oven to 400°F (200°C).
- Rinse the quinoa under cold water. In a saucepan, combine the quinoa with 2 cups of water and a pinch of sea salt. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes until the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
- While the quinoa is cooking, peel and cut the sweet potatoes into 1-inch cubes. Place them on a baking sheet, drizzle with 1 tablespoon of olive oil, season with sea salt and black pepper, and toss to coat. Roast in the preheated oven for 20 minutes.
- Trim the ends of the broccolini. After the sweet potatoes have roasted for 20 minutes, add the broccolini to the baking sheet, drizzle with another tablespoon of olive oil, and season with sea salt and black pepper. Return the baking sheet to the oven and roast for an additional 15 minutes.
