Ingredients
- 3 g Black Pepper
- 75 g Broccoli
- 227 g Cooked Ham
- 7.5 g Fresh parsley
- 1 g Garlic
- 15.75 g Lemon juice
- 8.4 g Olive oil
- 56.25 g Quinoa
- 57.5 g Red Bell Pepper
- 3 g Salt
Instructions
- Rinse the quinoa under cold water. Cook according to package instructions.
- While quinoa cooks, dice the cooked ham into bite-sized pieces.
- Chop the broccoli florets into smaller pieces. Dice the red bell pepper.
- Mince the garlic cloves.
- In a large pan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the diced red bell pepper and broccoli florets to the pan. Sauté for 5-7 minutes until the vegetables are tender-crisp.
- Add the diced ham to the pan and cook for an additional 3 minutes until heated through.
- In a large mixing bowl, combine the cooked quinoa, sautéed vegetables, and ham. Drizzle with the remaining 1 tablespoon of olive oil and lemon juice. Toss to combine.
- Season with salt and black pepper to taste. Garnish with chopped fresh parsley.
