Slow-Cooker Pork Tenderloin with Tomato Herb Lentils

Ingredients
- 0.2 g Bay Leaf
- 0.5 g Black Pepper
- 90 g Carrot
- 45 g Celery
- 230 g Chicken broth
- 180 g Diced tomatoes
- 1 g Dried Thyme
- 65 g Dry Green lentils
- 5 g Garlic
- 5 g Olive oil
- 180 g Pork Tenderloin
- 2 g Salt
- 15 g Tomato Paste
- 60 g Yellow Onion
Instructions
- Rinse the dry lentils under cold water and set aside.
- Chop the carrots, onion, celery, and garlic.
- Add the lentils, carrots, onion, celery, garlic, diced tomatoes, tomato paste, chicken broth, thyme, bay leaf, salt, pepper, and olive oil to the slow cooker.
- Stir well, then place the pork tenderloin on top of the lentil mixture.
- Cover and cook on low heat until the pork is tender and the lentils are cooked, about 4 hours.
- Remove the pork and rest it for 5 minutes. Discard the bay leaf.
- Slice the pork and portion it with the tomato herb lentils. Cool completely before refrigerating for meal prep.
