Ingredients
- 1 g Bay Leaf
- 500 g Beef Broth
- 1 g Black Pepper
- 70 g Carrot
- 50 g Celery
- 120 g Diced tomatoes
- 1 g Dried Thyme
- 5 g Garlic
- 140 g Lean ground beef
- 45 g Pearl Barley
- 130 g Potato
- 1 g Salt
- 15 g Tomato Paste
- 60 g Yellow Onion
Instructions
- Dice the potato, carrot, celery, and onion. Mince the garlic.
- In a skillet over medium-high heat, cook the ground beef with the onion and garlic until the beef is browned. Drain excess fat if needed.
- Transfer the beef mixture to the slow cooker.
- Add the barley, potato, carrot, celery, beef broth, diced tomatoes, tomato paste, thyme, bay leaf, pepper, and salt.
- Stir well, cover, and cook on low until the barley and vegetables are tender.
- Remove and discard the bay leaf. Stir the soup and adjust the seasoning if needed.
- Cool slightly before portioning into meal-prep containers.
