Hearty Beef and Lentil Vegetable Soup

Ingredients
- 450 g Beef Broth
- 1 g Black Pepper
- 5 g Canola Oil
- 70 g Carrot
- 50 g Celery
- 150 g Diced tomatoes
- 55 g Dry Brown lentils
- 150 g Extra Lean Ground Beef
- 6 g Garlic
- 2 g Italian Seasoning
- 130 g Potato
- 2 g Salt
- 18 g Tomato Paste
- 60 g Yellow Onion
Instructions
- Rinse the lentils under cold water and set aside.
- Dice the potato, carrot, celery, and onion. Mince the garlic.
- Heat the canola oil in a medium pot over medium-high heat. Cook the ground beef, breaking it apart, until browned.
- Add the onion, carrot, celery, garlic, salt, pepper, and dried herbs. Cook for 4 minutes, stirring often.
- Stir in the tomato paste and cook for 1 minute.
- Add the lentils, potato, diced tomatoes, and beef broth. Bring to a boil.
- Reduce the heat to low, cover partially, and simmer for 25 to 30 minutes, until the lentils and potato are tender. Cool before portioning for meal prep.
