Pear, Ham and Swiss Egg Bake
A simple savoury breakfast meal prep with tender potatoes, diced ham, Swiss cheese, and sweet Bartlett pear baked into a fluffy egg casserole. It is easy to portion for a satisfying grab-and-go morning meal.

Ingredients
- 100 g Bartlett Pear
- 0.5 g Black Pepper
- 60 g Cooked Ham
- 100 g Egg
- 30 g Milk 2%
- 5 g Olive oil
- 40 g Onion
- 150 g Potato
- 1 g Salt
- 30 g Swiss cheese
Instructions
- Heat the oven to 190°C. Lightly oil a small oven-safe baking dish.
- Dice the potato and onion. Cook them in a skillet with the olive oil over medium heat until the potato is nearly tender, about 10 minutes.
- Dice the Bartlett pear and ham. Add the ham and pear to the skillet and cook for 2 minutes.
- Whisk the eggs, milk, salt, and black pepper in a bowl. Stir in half of the Swiss cheese.
- Transfer the potato mixture to the baking dish and pour the egg mixture over top. Sprinkle with the remaining Swiss cheese.
- Bake until the eggs are set and lightly golden, about 18 minutes. Cool slightly before portioning and refrigerating for meal prep.
