Dijon-Lime Turkey Meatballs with Roasted Potatoes and Carrots

Ingredients
- 1 g Black Pepper
- 18 g Breadcrumbs
- 130 g Carrot
- 15 g Dijon mustard
- 30 g Egg
- 2 g Fresh parsley
- 2 g Garlic Powder
- 100 g Green Bean
- 170 g Ground Turkey
- 35 g Lime
- 10 g Olive oil
- 220 g Potato
- 2 g Salt
- 45 g Yellow Onion
Instructions
- Heat the oven to 220°C. Line a baking sheet with parchment paper.
- Cut the potatoes and carrots into bite-size pieces. Toss with half of the olive oil, half of the salt, and half of the pepper.
- Spread the potatoes and carrots on the baking sheet and roast for 15 minutes.
- Finely chop the onion. Zest the lime and squeeze its juice into a small bowl.
- Combine the ground turkey, onion, egg, breadcrumbs, garlic powder, dried parsley, lime zest, half of the Dijon mustard, and the remaining salt and pepper. Form into small meatballs.
- Move the vegetables to one side of the baking sheet. Add the meatballs and green beans, drizzle with the remaining olive oil, and bake for 15 minutes, until the turkey is cooked through.
- Mix the remaining Dijon mustard with the lime juice. Drizzle over the meatballs and vegetables, then let cool before packing into a meal-prep container.
