Ingredients

  • 130 g Black Bean
  • 60 g Chicken broth
  • 15 g Cilantro
  • 40 g Corn kernel
  • 1.5 g Cumin
  • 0.63 g Dried Oregano
  • 1.5 g Garlic Powder
  • 57.5 g Lime
  • 3.4 g Olive oil
  • 57.5 g Red Bell Pepper
  • 90 g Rice
  • 7.1 g Smoked Paprika
  • 500 g Whole Chicken
  • 57.5 g Yellow Onion

Instructions

  1. Season the whole chicken with spices and place in a slow cooker with chicken broth. Cook on LOW for 6-8 hours or HIGH for 3-4 hours until tender. Shred the chicken and mix with its juices.
  2. Preheat oven to 400°F (200°C). Toss sliced bell peppers and onions with olive oil, salt, and pepper. Roast for 20 minutes until slightly charred.
  3. Divide cooked rice into four meal prep containers.
  4. Top each container with pulled chicken, black beans, corn, and roasted vegetables.
  5. Garnish with fresh cilantro and a squeeze of lime juice before serving.
