Ingredients
- 130 g Black Bean
- 60 g Chicken broth
- 15 g Cilantro
- 40 g Corn kernel
- 1.5 g Cumin
- 0.63 g Dried Oregano
- 1.5 g Garlic Powder
- 57.5 g Lime
- 3.4 g Olive oil
- 57.5 g Red Bell Pepper
- 90 g Rice
- 7.1 g Smoked Paprika
- 500 g Whole Chicken
- 57.5 g Yellow Onion
Instructions
- Season the whole chicken with spices and place in a slow cooker with chicken broth. Cook on LOW for 6-8 hours or HIGH for 3-4 hours until tender. Shred the chicken and mix with its juices.
- Preheat oven to 400°F (200°C). Toss sliced bell peppers and onions with olive oil, salt, and pepper. Roast for 20 minutes until slightly charred.
- Divide cooked rice into four meal prep containers.
- Top each container with pulled chicken, black beans, corn, and roasted vegetables.
- Garnish with fresh cilantro and a squeeze of lime juice before serving.
