Bacon Black Bean Quesadillas

Ingredients
- 50 g Bacon
- 100 g Black Bean
- 50 g Cheddar Cheese
- 50 g Corn kernel
- 2 g Cumin
- 70 g Red Bell Pepper
- 40 g Salsa
- 5 g Vegetable oil
- 100 g Whole Wheat Tortilla
- 40 g Yellow Onion
Instructions
- Finely dice the bacon, red bell pepper, and onion.
- Cook the bacon in a skillet over medium heat until browned and crisp, about 6 minutes. Transfer the bacon to a plate, leaving a small amount of fat in the skillet.
- Add the oil, onion, and bell pepper to the skillet. Cook for 4 minutes until softened.
- Stir in the black beans, corn, salsa, cumin, and cooked bacon. Cook for 3 minutes, lightly mashing some of the beans to help the filling hold together.
- Divide the filling and cheddar over half of each tortilla, then fold the tortillas closed.
- Cook the quesadillas in a clean skillet over medium heat for 2 to 3 minutes per side, until golden and the cheese has melted. Cool slightly before cutting into wedges for meal-prep storage.
