Ham and Corn Cottage Pie

Ingredients

  • 1 g Black Pepper
  • 8 g Butter
  • 60 g Carrot
  • 25 g Cheddar Cheese
  • 90 g Cooked Ham
  • 90 g Corn kernel
  • 6 g Dijon mustard
  • 35 g Milk 2%
  • 230 g Potato
  • 1 g Salt
  • 40 g Yellow Onion

Instructions

  1. Peel and chop the potatoes, then boil them in salted water until tender.
  2. Drain the potatoes and mash them with the milk, butter, half of the cheddar, salt, and black pepper.
  3. Dice the cooked ham, onion, and carrot into small pieces.
  4. In a skillet over medium heat, cook the onion and carrot until softened.
  5. Add the cooked ham, frozen corn, and Dijon mustard, then stir until everything is hot and well mixed.
  6. Transfer the ham and corn mixture to a meal-prep baking dish or oven-safe container.
  7. Spread the mashed potatoes over the filling and sprinkle with the remaining cheddar.
  8. Bake until the top is lightly golden, then cool before covering and refrigerating for meal prep.
