Ham and Corn Cottage Pie

Ingredients
- 1 g Black Pepper
- 8 g Butter
- 60 g Carrot
- 25 g Cheddar Cheese
- 90 g Cooked Ham
- 90 g Corn kernel
- 6 g Dijon mustard
- 35 g Milk 2%
- 230 g Potato
- 1 g Salt
- 40 g Yellow Onion
Instructions
- Peel and chop the potatoes, then boil them in salted water until tender.
- Drain the potatoes and mash them with the milk, butter, half of the cheddar, salt, and black pepper.
- Dice the cooked ham, onion, and carrot into small pieces.
- In a skillet over medium heat, cook the onion and carrot until softened.
- Add the cooked ham, frozen corn, and Dijon mustard, then stir until everything is hot and well mixed.
- Transfer the ham and corn mixture to a meal-prep baking dish or oven-safe container.
- Spread the mashed potatoes over the filling and sprinkle with the remaining cheddar.
- Bake until the top is lightly golden, then cool before covering and refrigerating for meal prep.
