Bacon Brussels Sprout Gnocchi Skillet

Ingredients

  • 50 g Bacon
  • 1 g Black Pepper
  • 150 g Brussels sprout
  • 5 g Garlic
  • 10 g Lemon juice
  • 5 g Olive oil
  • 15 g Parmesan Cheese
  • 180 g Potato gnocchi
  • 1 g Salt
  • 30 g Water
  • 50 g Yellow Onion

Instructions

  1. Cut the bacon into small pieces, trim and halve the Brussels sprouts, dice the onion, and mince the garlic.
  2. Heat a skillet over medium heat and cook the bacon until crisp. Transfer the bacon to a plate, leaving the rendered fat in the skillet.
  3. Add the Brussels sprouts and onion to the skillet. Cook until the sprouts are browned on the cut sides and the onion begins to soften.
  4. Stir in the garlic, salt, and black pepper, and cook briefly until fragrant.
  5. Add the potato gnocchi, olive oil, and water. Cover and cook until the gnocchi are tender and the Brussels sprouts are cooked through.
  6. Uncover and cook a little longer, stirring occasionally, until the gnocchi are lightly golden.
  7. Stir the bacon back into the skillet, then add the lemon juice and Parmesan cheese.
  8. Let cool slightly, then portion into a meal-prep container for easy reheating.
