Bacon Brussels Sprout Gnocchi Skillet

Ingredients
- 50 g Bacon
- 1 g Black Pepper
- 150 g Brussels sprout
- 5 g Garlic
- 10 g Lemon juice
- 5 g Olive oil
- 15 g Parmesan Cheese
- 180 g Potato gnocchi
- 1 g Salt
- 30 g Water
- 50 g Yellow Onion
Instructions
- Cut the bacon into small pieces, trim and halve the Brussels sprouts, dice the onion, and mince the garlic.
- Heat a skillet over medium heat and cook the bacon until crisp. Transfer the bacon to a plate, leaving the rendered fat in the skillet.
- Add the Brussels sprouts and onion to the skillet. Cook until the sprouts are browned on the cut sides and the onion begins to soften.
- Stir in the garlic, salt, and black pepper, and cook briefly until fragrant.
- Add the potato gnocchi, olive oil, and water. Cover and cook until the gnocchi are tender and the Brussels sprouts are cooked through.
- Uncover and cook a little longer, stirring occasionally, until the gnocchi are lightly golden.
- Stir the bacon back into the skillet, then add the lemon juice and Parmesan cheese.
- Let cool slightly, then portion into a meal-prep container for easy reheating.
