Lime-Dill Salmon Potato Box

A simple baked salmon meal-prep box with tender potatoes, green beans, and a cool lime-dill yogurt sauce for a fresh make-ahead lunch.

Ingredients

  • 220 g Baby potatoes
  • 1 g Black Pepper
  • 3 g Fresh Dill
  • 3 g Garlic
  • 60 g Greek Yogurt
  • 120 g Green Bean
  • 30 g Lime
  • 10 g Olive oil
  • 150 g Salmon fillet
  • 2 g Salt

Instructions

  1. Heat the oven to 205°C and line a baking sheet with parchment paper.
  2. Halve the baby potatoes, trim the green beans, mince the garlic, and zest and juice the lime.
  3. Toss the potatoes with olive oil, garlic, salt, and black pepper, then spread them on the baking sheet.
  4. Bake the potatoes for 15 minutes, then push them to one side of the baking sheet.
  5. Add the salmon and green beans to the baking sheet. Season with a little lime zest, salt, and black pepper.
  6. Bake for 10 minutes more, or until the salmon flakes easily and the potatoes are tender.
  7. Stir the Greek yogurt with lime juice, remaining lime zest, dill, and a pinch of salt to make the sauce.
  8. Pack the salmon, potatoes, and green beans into a meal-prep container, keeping the lime-dill yogurt sauce separate until serving.
