Lime-Dill Salmon Potato Box

Ingredients
- 220 g Baby potatoes
- 1 g Black Pepper
- 3 g Fresh Dill
- 3 g Garlic
- 60 g Greek Yogurt
- 120 g Green Bean
- 30 g Lime
- 10 g Olive oil
- 150 g Salmon fillet
- 2 g Salt
Instructions
- Heat the oven to 205°C and line a baking sheet with parchment paper.
- Halve the baby potatoes, trim the green beans, mince the garlic, and zest and juice the lime.
- Toss the potatoes with olive oil, garlic, salt, and black pepper, then spread them on the baking sheet.
- Bake the potatoes for 15 minutes, then push them to one side of the baking sheet.
- Add the salmon and green beans to the baking sheet. Season with a little lime zest, salt, and black pepper.
- Bake for 10 minutes more, or until the salmon flakes easily and the potatoes are tender.
- Stir the Greek yogurt with lime juice, remaining lime zest, dill, and a pinch of salt to make the sauce.
- Pack the salmon, potatoes, and green beans into a meal-prep container, keeping the lime-dill yogurt sauce separate until serving.
