Smoky Bacon Chickpea Couscous

Ingredients
- 60 g Bacon
- 1 g Black Pepper
- 120 g Chickpeas
- 160 g Diced tomatoes
- 70 g Dry couscous
- 5 g Garlic
- 10 g Lemon juice
- 5 g Olive oil
- 2 g Paprika
- 1 g Salt
- 40 g Spinach
- 50 g Yellow Onion
- 120 g Zucchini
Instructions
- Dice the bacon, onion, zucchini, and garlic. Rinse and drain the chickpeas.
- Heat a skillet over medium heat and cook the bacon until browned and crisp. Transfer the bacon to a plate, leaving a little rendered fat in the skillet.
- Add the olive oil and onion to the skillet. Cook until the onion softens, then stir in the garlic, zucchini, paprika, salt, and black pepper.
- Add the diced tomatoes and chickpeas. Simmer until the zucchini is tender and the mixture is slightly thickened.
- Stir in the spinach until wilted, then add the cooked bacon back to the skillet.
- Prepare the couscous with hot water according to the package directions, then fluff it with a fork.
- Spoon the bacon chickpea mixture over the couscous and finish with lemon juice. Cool before packing for meal prep.
