Lemon Oregano Steak Couscous Boxes
A simple Mediterranean-inspired meal-prep box with seared steak, fluffy couscous, crisp cucumber, tomatoes, spinach, feta, and a cool lemon yogurt sauce. It keeps well with the sauce packed separately for fresh weekday lunches.

Ingredients
- 1 g Black Pepper
- 80 g Cherry tomatoes
- 80 g Cucumber
- 2 g Dried Oregano
- 60 g Dry couscous
- 30 g Feta Cheese
- 3 g Garlic
- 50 g Greek Yogurt
- 20 g Lemon juice
- 10 g Olive oil
- 25 g Red Onion
- 1 g Salt
- 40 g Spinach
- 170 g Steak
Instructions
- Cook the dry couscous with boiling water according to the package directions, then fluff it and let it cool slightly.
- Pat the steak dry and season it with salt, black pepper, half of the dried oregano, and half of the olive oil.
- Heat a skillet over medium-high heat and sear the steak until browned and cooked to your preference, then rest it on a board.
- Chop the cucumber, cherry tomatoes, red onion, and baby spinach into meal-prep friendly pieces.
- Mix the Greek yogurt with lemon juice, grated garlic, the remaining oregano, and the remaining olive oil to make the sauce.
- Slice the rested steak thinly across the grain.
- Pack the couscous, steak, cucumber, tomatoes, spinach, red onion, and feta into a meal-prep container, keeping the yogurt sauce in a separate small container until serving.
