Ingredients

  • 57.5 g Avocado
  • 56.25 g Brown Rice
  • 130 g Canned Black Bean
  • 15 g Cilantro
  • 115 g Green Bell Pepper
  • 170.1 g Ground beef
  • 5 g Lime
  • 9 g Low-Sodium Taco Seasoning
  • 3.4 g Olive oil
  • 50 g Onion
  • 57.5 g Tomato

Instructions

  1. Rinse brown rice and cook according to package instructions. Once cooked, mix with lime juice and cilantro for added flavor.
  2. Heat olive oil in a large skillet over medium heat. Add diced onions and sauté for 2 minutes.
  3. Add ground beef and cook for 5-7 minutes, breaking it up as it browns. Stir in taco seasoning and diced tomatoes, and cook for 3 more minutes.
  4. Slice green bell peppers into strips. Spread on a baking sheet, drizzle with olive oil, and roast at 400°F (200°C) for 15 minutes until tender.
  5. In each container, add 1/2 cup rice, 1/4 of the cooked ground beef, and roasted bell peppers. Top with black beans, diced avocado, and extra lime juice.
  6. Enjoy immediately or store in meal-prep containers for up to 4 days.
