Ingredients
- 57.5 g Avocado
- 56.25 g Brown Rice
- 130 g Canned Black Bean
- 15 g Cilantro
- 115 g Green Bell Pepper
- 170.1 g Ground beef
- 5 g Lime
- 9 g Low-Sodium Taco Seasoning
- 3.4 g Olive oil
- 50 g Onion
- 57.5 g Tomato
Instructions
- Rinse brown rice and cook according to package instructions. Once cooked, mix with lime juice and cilantro for added flavor.
- Heat olive oil in a large skillet over medium heat. Add diced onions and sauté for 2 minutes.
- Add ground beef and cook for 5-7 minutes, breaking it up as it browns. Stir in taco seasoning and diced tomatoes, and cook for 3 more minutes.
- Slice green bell peppers into strips. Spread on a baking sheet, drizzle with olive oil, and roast at 400°F (200°C) for 15 minutes until tender.
- In each container, add 1/2 cup rice, 1/4 of the cooked ground beef, and roasted bell peppers. Top with black beans, diced avocado, and extra lime juice.
