Ingredients
- 1 g Black Pepper
- 100 g Cherry tomatoes
- 1 g Dried Oregano
- 60 g Dry couscous
- 3 g Garlic
- 50 g Greek Yogurt
- 45 g Lemon
- 10 g Olive oil
- 180 g Pork Loin
- 35 g Red Onion
- 1 g Salt
- 120 g Zucchini
Instructions
- Heat the oven to 220°C. Cut the zucchini and red onion into bite-size pieces and halve the cherry tomatoes.
- Rub the pork loin with olive oil, lemon zest, garlic, dried oregano, salt, and black pepper.
- Place the pork loin on a lined baking sheet with the zucchini, tomatoes, and red onion. Roast until the pork is cooked through and the vegetables are tender.
- While the pork roasts, prepare the dry couscous according to the package directions using hot water. Fluff it well.
- Mix the Greek yogurt with lemon juice and a small pinch of the salt and pepper from the measured ingredients to make a quick sauce.
- Let the pork rest briefly, then slice it into meal-prep-friendly pieces.
- Pack the couscous, roasted vegetables, and sliced pork into a meal-prep container. Keep the yogurt sauce separate until serving.
