Ingredients

  • 1 g Black Pepper
  • 100 g Cherry tomatoes
  • 1 g Dried Oregano
  • 60 g Dry couscous
  • 3 g Garlic
  • 50 g Greek Yogurt
  • 45 g Lemon
  • 10 g Olive oil
  • 180 g Pork Loin
  • 35 g Red Onion
  • 1 g Salt
  • 120 g Zucchini

Instructions

  1. Heat the oven to 220°C. Cut the zucchini and red onion into bite-size pieces and halve the cherry tomatoes.
  2. Rub the pork loin with olive oil, lemon zest, garlic, dried oregano, salt, and black pepper.
  3. Place the pork loin on a lined baking sheet with the zucchini, tomatoes, and red onion. Roast until the pork is cooked through and the vegetables are tender.
  4. While the pork roasts, prepare the dry couscous according to the package directions using hot water. Fluff it well.
  5. Mix the Greek yogurt with lemon juice and a small pinch of the salt and pepper from the measured ingredients to make a quick sauce.
  6. Let the pork rest briefly, then slice it into meal-prep-friendly pieces.
  7. Pack the couscous, roasted vegetables, and sliced pork into a meal-prep container. Keep the yogurt sauce separate until serving.
