Ingredients

  • 100 g Apple
  • 1 g Black Pepper
  • 10 g Canola Oil
  • 80 g Chicken broth
  • 15 g Dijon mustard
  • 120 g Green Cabbage
  • 170 g Pork Loin
  • 180 g Potato
  • 2 g Salt
  • 40 g Yellow Onion

Instructions

  1. Cut the potatoes into small cubes, slice the cabbage, slice the onion, and cut the apple into thin wedges.
  2. Slice the pork loin into medallions and season with salt and black pepper.
  3. Place the potatoes in a small pot, cover with water, and simmer until just tender, then drain.
  4. Heat the canola oil in a skillet over medium-high heat. Sear the pork medallions on both sides until browned, then transfer to a plate.
  5. Add the onion, cabbage, and apple to the same skillet. Cook until the cabbage begins to soften.
  6. Stir the Dijon mustard into the chicken broth, then pour it into the skillet with the drained potatoes.
  7. Return the pork to the skillet, cover, and simmer until the pork is cooked through and the vegetables are tender.
  8. Let cool slightly, then pack the pork, potatoes, cabbage, apple, and pan sauce into a meal-prep container.
