Ingredients
- 0.5 g Black Pepper
- 18 g Breadcrumbs
- 80 g Cherry tomatoes
- 80 g Cucumber
- 1 g Dried Oregano
- 60 g Dry couscous
- 25 g Feta Cheese
- 1 g Garlic Powder
- 60 g Greek Yogurt
- 150 g Ground Chicken
- 15 g Lemon juice
- 8 g Olive oil
- 20 g Red Onion
- 1 g Salt
Instructions
- Heat the oven to 205°C and line a small baking sheet with parchment paper.
- In a bowl, mix the ground chicken, breadcrumbs, half of the oregano, half of the garlic powder, half of the salt, and half of the black pepper.
- Shape the mixture into small meatballs and place them on the prepared baking sheet.
- Bake for 18 to 20 minutes, until the meatballs are fully cooked and lightly golden.
- Place the dry couscous in a heatproof bowl, cover with an equal weight of boiling water, cover the bowl, and let stand for 5 minutes. Fluff with a fork and stir in the olive oil.
- In a small bowl, stir together the Greek yogurt, lemon juice, remaining oregano, remaining garlic powder, remaining salt, and remaining black pepper.
- Chop the cucumber, cherry tomatoes, and red onion into bite-size pieces.
- Pack the couscous, meatballs, vegetables, feta, and yogurt sauce in a meal-prep container, keeping the sauce separate if desired.
