Ingredients

  • 90 g Canned Black Bean
  • 25 g Cheddar Cheese
  • 60 g Corn kernel
  • 150 g Ground Veal
  • 6 g Low-Sodium Taco Seasoning
  • 8 g Olive oil
  • 80 g Red Bell Pepper
  • 80 g Salsa
  • 1 g Salt
  • 180 g Sweet Potato
  • 50 g Yellow Onion

Instructions

  1. Dice the sweet potato, onion, and red bell pepper into small, even pieces.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the sweet potato and cook until it begins to soften, stirring often.
  4. Add the onion and red bell pepper, then cook until the vegetables are tender.
  5. Add the ground veal and taco seasoning, breaking up the meat as it cooks until no pink remains.
  6. Stir in the black beans, frozen corn, and salsa, then simmer until everything is hot and the mixture thickens slightly.
  7. Remove from the heat, sprinkle with cheddar cheese, and let it melt before portioning into a meal-prep container.
