- 90 g Canned Black Bean
- 25 g Cheddar Cheese
- 60 g Corn kernel
- 150 g Ground Veal
- 6 g Low-Sodium Taco Seasoning
- 8 g Olive oil
- 80 g Red Bell Pepper
- 80 g Salsa
- 1 g Salt
- 180 g Sweet Potato
- 50 g Yellow Onion
Instructions
- Dice the sweet potato, onion, and red bell pepper into small, even pieces.
- Heat the olive oil in a large skillet over medium heat.
- Add the sweet potato and cook until it begins to soften, stirring often.
- Add the onion and red bell pepper, then cook until the vegetables are tender.
- Add the ground veal and taco seasoning, breaking up the meat as it cooks until no pink remains.
- Stir in the black beans, frozen corn, and salsa, then simmer until everything is hot and the mixture thickens slightly.
- Remove from the heat, sprinkle with cheddar cheese, and let it melt before portioning into a meal-prep container.
