Ingredients

  • 180 g Boneless Top Sirloin
  • 80 g Canned Black Bean
  • 20 g Cheddar Cheese
  • 2 g Chili Powder
  • 60 g Corn kernel
  • 1 g Cumin
  • 5 g Olive oil
  • 70 g Red Bell Pepper
  • 30 g Red Onion
  • 60 g Rice
  • 60 g Salsa
  • 1 g Salt

Instructions

  1. Cook the long grain rice in water until tender, then set it aside.
  2. Pat the boneless top sirloin dry and season it with the chili powder, ground cumin, and salt.
  3. Heat the olive oil in a skillet over medium-high heat and sear the sirloin until browned and cooked to your preference.
  4. Transfer the sirloin to a cutting board and let it rest while preparing the vegetables.
  5. In the same skillet, cook the red onion, red bell pepper, and frozen corn until softened and lightly browned.
  6. Stir in the black beans and tomato salsa, then cook until the mixture is hot.
  7. Slice the rested sirloin thinly across the grain.
  8. Pack the rice into a meal-prep container, top with the bean and vegetable mixture, sliced sirloin, and cheddar cheese.
