Ingredients
- 120 g Bell Pepper
- 1 g Black Pepper
- 180 g Boneless Top Sirloin
- 1 g Dried Oregano
- 25 g Feta Cheese
- 5 g Garlic
- 15 g Lemon juice
- 12 g Olive oil
- 220 g Potato
- 50 g Red Onion
- 2 g Salt
- 120 g Zucchini
Instructions
- Preheat the oven to 220°C and line a baking sheet with parchment paper.
- Cut the potatoes, zucchini, bell pepper, and red onion into meal-prep friendly bite-size pieces.
- Toss the potatoes with part of the olive oil, salt, pepper, and oregano, then spread them on the baking sheet.
- Roast the potatoes until they begin to soften, then add the zucchini, bell pepper, and red onion to the same sheet.
- Rub the boneless top sirloin with the remaining olive oil, lemon juice, garlic, salt, pepper, and oregano.
- Place the beef on the baking sheet and roast until the vegetables are tender and the beef is cooked to your preferred doneness.
- Let the beef rest briefly, then slice it thinly across the grain.
- Pack the potatoes, vegetables, sliced beef, and feta into a meal-prep container.
