Ingredients
- 70 g Apple
- 8 g Apple Cider Vinegar
- 1 g Black Pepper
- 15 g Dijon mustard
- 1 g Dried Thyme
- 120 g Green Bean
- 12 g Maple Syrup
- 8 g Olive oil
- 2 g Salt
- 180 g Sweet Potato
- 350 g Whole Chicken
- 60 g Yellow Onion
Instructions
- Heat the oven to 200°C and line a roasting pan with parchment paper.
- Cut the sweet potato, onion, and apple into meal-prep friendly chunks, then spread them in the roasting pan.
- Stir together the Dijon mustard, maple syrup, apple cider vinegar, olive oil, thyme, salt, and black pepper.
- Pat the whole chicken dry and brush it all over with the maple-mustard mixture.
- Place the chicken over the vegetables and roast until the chicken is cooked through and the sweet potatoes are tender.
- Add the green beans to the pan for the final part of cooking so they stay bright and slightly crisp.
- Let the chicken rest, then remove the meat from the bones and portion it with the roasted sweet potatoes, apple, onion, and green beans.
