Ingredients

  • 70 g Apple
  • 8 g Apple Cider Vinegar
  • 1 g Black Pepper
  • 15 g Dijon mustard
  • 1 g Dried Thyme
  • 120 g Green Bean
  • 12 g Maple Syrup
  • 8 g Olive oil
  • 2 g Salt
  • 180 g Sweet Potato
  • 350 g Whole Chicken
  • 60 g Yellow Onion

Instructions

  1. Heat the oven to 200°C and line a roasting pan with parchment paper.
  2. Cut the sweet potato, onion, and apple into meal-prep friendly chunks, then spread them in the roasting pan.
  3. Stir together the Dijon mustard, maple syrup, apple cider vinegar, olive oil, thyme, salt, and black pepper.
  4. Pat the whole chicken dry and brush it all over with the maple-mustard mixture.
  5. Place the chicken over the vegetables and roast until the chicken is cooked through and the sweet potatoes are tender.
  6. Add the green beans to the pan for the final part of cooking so they stay bright and slightly crisp.
  7. Let the chicken rest, then remove the meat from the bones and portion it with the roasted sweet potatoes, apple, onion, and green beans.
