Ingredients

  • 1 g Black Pepper
  • 80 g Carrot
  • 150 g Chicken broth
  • 150 g Crushed Tomatoes
  • 100 g Green Cabbage
  • 8 g Olive oil
  • 3 g Paprika
  • 70 g Pearl Barley
  • 75 g Red Bell Pepper
  • 2 g Salt
  • 350 g Whole Chicken
  • 60 g Yellow Onion

Instructions

  1. Chop the onion, carrot, cabbage, and red bell pepper into meal-prep friendly pieces.
  2. Place the chopped vegetables in a slow cooker with the pearl barley, crushed tomatoes, chicken broth, olive oil, paprika, salt, and black pepper.
  3. Pat the whole chicken dry, then place it on top of the barley and vegetable mixture.
  4. Cover and cook until the chicken is fully cooked and the barley is tender.
  5. Transfer the chicken to a cutting board and let it rest briefly before removing the skin and bones.
  6. Shred the chicken meat and stir it back into the tomato, barley, and vegetable mixture.
  7. Divide into meal-prep containers and cool before refrigerating.
