Ingredients
- 120 g Broccoli
- 80 g Carrot
- 4 g Garlic
- 6 g Ginger
- 15 g Green Onion
- 10 g Honey
- 75 g Rice
- 5 g Sesame Oil
- 20 g Soy Sauce
- 300 g Whole Chicken
Instructions
- Rinse the rice, then cook it in water until tender and fluffy.
- Place the whole chicken in a large pot and add enough water to mostly cover it.
- Add the soy sauce, grated ginger, crushed garlic, honey, and sesame oil to the pot.
- Bring to a gentle boil, then reduce the heat and simmer until the chicken is fully cooked and tender.
- Remove the chicken from the pot, let it cool slightly, then pull the meat from the bones and discard the skin if desired.
- Simmer the cooking liquid for a few minutes to reduce it into a light sauce, then toss some of it with the shredded chicken.
- Steam or lightly boil the broccoli and carrot until just tender.
- Pack the rice, soy-ginger chicken, broccoli, carrot, and chopped green onion into a meal-prep container.
