Ingredients

  • 120 g Broccoli
  • 80 g Carrot
  • 4 g Garlic
  • 6 g Ginger
  • 15 g Green Onion
  • 10 g Honey
  • 75 g Rice
  • 5 g Sesame Oil
  • 20 g Soy Sauce
  • 300 g Whole Chicken

Instructions

  1. Rinse the rice, then cook it in water until tender and fluffy.
  2. Place the whole chicken in a large pot and add enough water to mostly cover it.
  3. Add the soy sauce, grated ginger, crushed garlic, honey, and sesame oil to the pot.
  4. Bring to a gentle boil, then reduce the heat and simmer until the chicken is fully cooked and tender.
  5. Remove the chicken from the pot, let it cool slightly, then pull the meat from the bones and discard the skin if desired.
  6. Simmer the cooking liquid for a few minutes to reduce it into a light sauce, then toss some of it with the shredded chicken.
  7. Steam or lightly boil the broccoli and carrot until just tender.
  8. Pack the rice, soy-ginger chicken, broccoli, carrot, and chopped green onion into a meal-prep container.
