Sesame Ginger Cauliflower Chicken Noodle Bowls

Ingredients
- 5 g Canola Oil
- 80 g Carrot
- 220 g Cauliflower
- 140 g Chicken Breast
- 75 g Egg noodles
- 4 g Garlic
- 5 g Ginger
- 15 g Green Onion
- 10 g Honey
- 8 g Sesame Oil
- 70 g Shelled Edamame
- 25 g Soy Sauce
Instructions
- Heat the oven to 220°C and line a baking sheet with parchment paper.
- Cut the cauliflower into small florets and cut the chicken into bite-size pieces.
- Place the cauliflower and chicken on the baking sheet, coat with canola oil, and roast until the chicken is cooked through and the cauliflower is lightly browned.
- Cook the egg noodles per package instructions, adding the edamame near the end of cooking, then drain.
- Grate the carrot and thinly slice the green onion.
- In a bowl, mix the soy sauce, sesame oil, honey, grated ginger, and minced garlic to make the sauce.
- Toss the noodles and edamame with the sauce, then top with roasted chicken, cauliflower, carrot, and green onion.
- Let cool before sealing in a meal-prep container and refrigerating.
