A simple make-ahead noodle bowl with roasted cauliflower, chicken, carrots, edamame, and a sesame ginger soy sauce for an easy lunch.

Ingredients

  • 5 g Canola Oil
  • 80 g Carrot
  • 220 g Cauliflower
  • 140 g Chicken Breast
  • 75 g Egg noodles
  • 4 g Garlic
  • 5 g Ginger
  • 15 g Green Onion
  • 10 g Honey
  • 8 g Sesame Oil
  • 70 g Shelled Edamame
  • 25 g Soy Sauce

Instructions

  1. Heat the oven to 220°C and line a baking sheet with parchment paper.
  2. Cut the cauliflower into small florets and cut the chicken into bite-size pieces.
  3. Place the cauliflower and chicken on the baking sheet, coat with canola oil, and roast until the chicken is cooked through and the cauliflower is lightly browned.
  4. Cook the egg noodles per package instructions, adding the edamame near the end of cooking, then drain.
  5. Grate the carrot and thinly slice the green onion.
  6. In a bowl, mix the soy sauce, sesame oil, honey, grated ginger, and minced garlic to make the sauce.
  7. Toss the noodles and edamame with the sauce, then top with roasted chicken, cauliflower, carrot, and green onion.
  8. Let cool before sealing in a meal-prep container and refrigerating.
