Ingredients

  • 8 g Canola Oil
  • 220 g Cauliflower
  • 25 g Cheddar Cheese
  • 4 g Chili Powder
  • 60 g Corn kernel
  • 120 g Crushed Tomatoes
  • 2 g Cumin
  • 1 g Garlic Powder
  • 150 g Ground Turkey
  • 80 g Red Bell Pepper
  • 55 g Rice
  • 1 g Salt
  • 120 g Water
  • 50 g Yellow Onion

Instructions

  1. Rinse the rice, then combine it with the water in a small pot. Bring to a boil, cover, reduce the heat, and cook until tender.
  2. Cut the cauliflower into small bite-size pieces, dice the bell pepper, and finely chop the onion.
  3. Heat the canola oil in a large skillet over medium heat. Add the onion and cook until it begins to soften.
  4. Add the ground turkey, chili powder, cumin, garlic powder, and salt. Cook while breaking up the meat until no pink remains.
  5. Stir in the cauliflower and bell pepper. Cook until the cauliflower is crisp-tender.
  6. Add the crushed tomatoes and frozen corn. Simmer until the vegetables are hot and the sauce lightly coats the mixture.
  7. Spoon the cooked rice into a meal-prep container, top with the turkey cauliflower mixture, and sprinkle with cheddar cheese.
