Ingredients
- 8 g Canola Oil
- 220 g Cauliflower
- 25 g Cheddar Cheese
- 4 g Chili Powder
- 60 g Corn kernel
- 120 g Crushed Tomatoes
- 2 g Cumin
- 1 g Garlic Powder
- 150 g Ground Turkey
- 80 g Red Bell Pepper
- 55 g Rice
- 1 g Salt
- 120 g Water
- 50 g Yellow Onion
Instructions
- Rinse the rice, then combine it with the water in a small pot. Bring to a boil, cover, reduce the heat, and cook until tender.
- Cut the cauliflower into small bite-size pieces, dice the bell pepper, and finely chop the onion.
- Heat the canola oil in a large skillet over medium heat. Add the onion and cook until it begins to soften.
- Add the ground turkey, chili powder, cumin, garlic powder, and salt. Cook while breaking up the meat until no pink remains.
- Stir in the cauliflower and bell pepper. Cook until the cauliflower is crisp-tender.
- Add the crushed tomatoes and frozen corn. Simmer until the vegetables are hot and the sauce lightly coats the mixture.
- Spoon the cooked rice into a meal-prep container, top with the turkey cauliflower mixture, and sprinkle with cheddar cheese.
