Pork and Sweet Potato Breakfast Hash

Ingredients

  • 1 g Black Pepper
  • 150 g Extra Lean Ground Pork
  • 6 g Garlic
  • 10 g Olive oil
  • 80 g Red Bell Pepper
  • 1 g Salt
  • 2 g Smoked Paprika
  • 40 g Spinach
  • 200 g Sweet Potato
  • 60 g Yellow Onion

Instructions

  1. Peel and dice the sweet potato into small pieces. Finely chop the onion, bell pepper, and garlic.
  2. Heat the olive oil in a large skillet over medium heat. Add the sweet potato and cook for about 10 minutes, stirring often, until it starts to soften.
  3. Add the onion and bell pepper. Cook for 4 to 5 minutes until the vegetables begin to soften.
  4. Add the ground pork and garlic. Break up the meat with a spoon and cook until the pork is no longer pink.
  5. Stir in the smoked paprika, salt, and black pepper. Mix well so the seasoning coats the hash evenly.
  6. Add the spinach and cook for 1 to 2 minutes, just until wilted.
  7. Taste and adjust seasoning if needed, then portion into containers and cool before refrigerating.
