Pork and Sweet Potato Breakfast Hash

Ingredients
- 1 g Black Pepper
- 150 g Extra Lean Ground Pork
- 6 g Garlic
- 10 g Olive oil
- 80 g Red Bell Pepper
- 1 g Salt
- 2 g Smoked Paprika
- 40 g Spinach
- 200 g Sweet Potato
- 60 g Yellow Onion
Instructions
- Peel and dice the sweet potato into small pieces. Finely chop the onion, bell pepper, and garlic.
- Heat the olive oil in a large skillet over medium heat. Add the sweet potato and cook for about 10 minutes, stirring often, until it starts to soften.
- Add the onion and bell pepper. Cook for 4 to 5 minutes until the vegetables begin to soften.
- Add the ground pork and garlic. Break up the meat with a spoon and cook until the pork is no longer pink.
- Stir in the smoked paprika, salt, and black pepper. Mix well so the seasoning coats the hash evenly.
- Add the spinach and cook for 1 to 2 minutes, just until wilted.
- Taste and adjust seasoning if needed, then portion into containers and cool before refrigerating.
