Pork, Potato and Green Bean Skillet

Ingredients
- 1 g Black Pepper
- 10 g Canola Oil
- 120 g Chicken broth
- 8 g Dijon mustard
- 1 g Dried Thyme
- 150 g Extra Lean Ground Pork
- 6 g Garlic
- 100 g Green Bean
- 50 g Onion
- 200 g Potato
- 2 g Salt
Instructions
- Peel the potatoes and cut them into small cubes. Trim the green beans and chop the onion and garlic.
- Heat the canola oil in a large skillet over medium heat. Add the onion and cook until softened, then add the garlic and cook briefly.
- Add the ground pork, salt, and pepper. Cook, breaking it apart, until no longer pink.
- Stir in the potatoes, chicken broth, Dijon mustard, and thyme. Cover and simmer until the potatoes are almost tender.
- Add the green beans and continue cooking uncovered until the vegetables are tender and the sauce has thickened slightly.
- Taste and adjust seasoning if needed. Divide into meal-prep containers and let cool before refrigerating.
