Ham and Cheddar Egg Muffins

Ingredients

  • 1 g Black Pepper
  • 40 g Cheddar Cheese
  • 120 g Cooked Ham
  • 150 g Egg
  • 30 g Milk 2%
  • 20 g Red Onion
  • 1 g Salt
  • 30 g Spinach

Instructions

  1. Preheat the oven to 190°C and lightly grease a muffin tin.
  2. Dice the cooked ham and finely chop the red onion and spinach.
  3. In a bowl, whisk the eggs with the milk, salt, and black pepper.
  4. Stir in the ham, cheddar, onion, and spinach until evenly combined.
  5. Divide the mixture evenly among the muffin cups, filling each about three-quarters full.
  6. Bake for 18 to 20 minutes, until the muffins are set and lightly golden.
  7. Let cool for a few minutes before removing from the pan and storing for meal prep.
