Ham and Apple Sheet-Pan Rice Bake

Ingredients
- 90 g Apple
- 1 g Black Pepper
- 120 g Broccoli
- 75 g Brown Rice
- 120 g Cooked Ham
- 10 g Dijon mustard
- 6 g Garlic
- 45 g Light Cream
- 30 g Mozzarella cheese
- 8 g Olive oil
- 60 g Onion
- 1 g Salt
- 180 g Vegetable broth
Instructions
- Preheat the oven to 190°C and lightly oil a baking dish.
- In a skillet, cook the onion in olive oil for 3 to 4 minutes, then add the garlic and cook for 1 minute more.
- Stir in the brown rice, vegetable broth, Dijon mustard, salt, and black pepper, then bring to a gentle simmer.
- Transfer the rice mixture to the baking dish and mix in the broccoli, apple, and cooked ham.
- Pour the light cream over the top and cover the dish tightly with foil.
- Bake for 25 minutes, then remove the foil and stir gently.
- Sprinkle mozzarella over the surface and bake uncovered for 10 more minutes until the rice is tender and the cheese is melted.
- Let rest for 5 minutes before portioning for meal prep.
