Ingredients
- 60 g Avocado
- 100 g Broccoli
- 40 g Carrot
- 80 g English cucumber
- 4 g Garlic
- 8 g Green Onion
- 140 g Ground Turkey
- 8 g Honey
- 180 g Jasmine rice
- 12 g Lime juice
- 6 g Sesame Oil
- 4 g Sesame seeds
- 18 g Soy Sauce
Instructions
- Cook the jasmine rice until tender, then fluff and let it cool slightly for meal prep portions.
- Steam or roast the broccoli until bright green and just tender, then set aside.
- Heat sesame oil in a pan, add ground turkey and garlic, and cook until no longer pink.
- Stir in soy sauce, honey, and lime juice, and cook for 1 to 2 minutes until the turkey is evenly coated and glossy.
- Mix the cucumber, carrot, avocado, green onion, and sesame seeds in a bowl to make the slaw.
- Divide the rice, broccoli, and turkey into containers, then top with the cucumber-avocado slaw.
- Chill before serving, and add a small squeeze of lime just before eating if desired.
