Ingredients
- 220 g Baby potatoes
- 1 g Black Pepper
- 170 g Cod fillet
- 10 g Dijon mustard
- 3 g Fresh Dill
- 4 g Garlic
- 120 g Green Bean
- 8 g Lemon juice
- 12 g Maple Syrup
- 10 g Olive oil
- 40 g Red Onion
- 2 g Salt
Instructions
- Preheat the oven to 425°F. Line a baking sheet or shallow dish with parchment paper.
- Cut the baby potatoes in half and thinly slice the red onion. Place them on the baking sheet with olive oil, salt, and black pepper, then toss to coat.
- Roast the potatoes and onion for 15 minutes until they begin to soften.
- In a small bowl, mix the maple syrup, Dijon mustard, lemon juice, and garlic to make the glaze.
- Add the green beans to the baking sheet, place the cod fillet on top, and brush the cod with the maple mustard glaze.
- Return the tray to the oven and bake for 12 to 15 minutes, until the cod flakes easily and the vegetables are tender.
- Sprinkle with fresh dill before portioning into meal-prep containers.
