Ingredients

  • 220 g Baby potatoes
  • 1 g Black Pepper
  • 170 g Cod fillet
  • 10 g Dijon mustard
  • 3 g Fresh Dill
  • 4 g Garlic
  • 120 g Green Bean
  • 8 g Lemon juice
  • 12 g Maple Syrup
  • 10 g Olive oil
  • 40 g Red Onion
  • 2 g Salt

Instructions

  1. Preheat the oven to 425°F. Line a baking sheet or shallow dish with parchment paper.
  2. Cut the baby potatoes in half and thinly slice the red onion. Place them on the baking sheet with olive oil, salt, and black pepper, then toss to coat.
  3. Roast the potatoes and onion for 15 minutes until they begin to soften.
  4. In a small bowl, mix the maple syrup, Dijon mustard, lemon juice, and garlic to make the glaze.
  5. Add the green beans to the baking sheet, place the cod fillet on top, and brush the cod with the maple mustard glaze.
  6. Return the tray to the oven and bake for 12 to 15 minutes, until the cod flakes easily and the vegetables are tender.
  7. Sprinkle with fresh dill before portioning into meal-prep containers.
