Beef and Cabbage Sesame Lettuce Bowls

A light meal-prep recipe with extra lean ground beef, shredded cabbage, carrots, and ginger in a savory sesame sauce, served over crisp lettuce. It is fresh, simple, and keeps well for quick lunches with a different flavour profile from heavier grain bowls or baked dishes.

Ingredients

  • 90 g Brown Rice
  • 60 g Carrot
  • 4 g Cornstarch
  • 150 g Extra Lean Ground Beef
  • 6 g Garlic
  • 5 g Ginger
  • 120 g Green Cabbage
  • 6 g Honey
  • 8 g Rice Vinegar
  • 80 g Romaine lettuce
  • 4 g Sesame Oil
  • 2 g Sesame seeds
  • 15 g Soy Sauce
  • 30 g Water
  • 50 g Yellow Onion

Instructions

  1. Cook the brown rice according to package directions and let it cool slightly before portioning.
  2. Heat the sesame oil in a large skillet over medium-high heat. Add the onion, garlic, and ginger, then cook until fragrant.
  3. Add the extra lean ground beef and cook, breaking it up, until browned and cooked through.
  4. Stir in the cabbage and carrots and cook until just tender but still slightly crisp.
  5. Mix the soy sauce, rice vinegar, honey, cornstarch, and water in a small bowl, then pour into the skillet and stir until the sauce thickens and coats the beef and vegetables.
  6. Divide the rice among meal-prep containers, top with the beef and cabbage mixture, and let cool before sealing.
  7. Pack the romaine lettuce separately and finish each portion with sesame seeds just before eating.
