Chipotle Beef Burrito Rice Bowls

Ingredients

  • 80 g Canned Black Bean
  • 25 g Cheddar Cheese
  • 4 g Chipotle Seasoning
  • 4 g Cilantro
  • 60 g Corn kernel
  • 100 g Diced tomatoes
  • 140 g Extra Lean Ground Beef
  • 10 g Lime juice
  • 8 g Olive oil
  • 70 g Red Bell Pepper
  • 75 g Rice
  • 1 g Salt
  • 50 g Yellow Onion

Instructions

  1. Rinse the rice, then cook it according to package directions until tender. Fluff and set aside.
  2. Heat half of the olive oil in a skillet over medium heat. Add the onion and red bell pepper and cook until softened.
  3. Add the extra lean ground beef, chipotle seasoning, and salt. Cook, breaking up the meat, until browned and fully cooked.
  4. Stir in the diced tomatoes, black beans, and corn. Simmer for a few minutes until the mixture is heated through and slightly thickened.
  5. Mix the cooked rice with the remaining olive oil and lime juice. Divide the rice into meal-prep containers.
  6. Top each portion with the beef mixture, then finish with cheddar cheese and fresh cilantro.
  7. Cool before sealing and refrigerating. Reheat until hot when ready to serve.
