Ingredients

  • 120 g Broccoli
  • 80 g Carrot
  • 60 g English cucumber
  • 4 g Garlic
  • 5 g Ginger
  • 10 g Green Onion
  • 8 g Honey
  • 75 g Jasmine rice
  • 18 g Miso paste
  • 180 g Pork Tenderloin
  • 70 g Red Bell Pepper
  • 10 g Rice Vinegar
  • 6 g Sesame Oil
  • 3 g Sesame seeds
  • 15 g Soy Sauce

Instructions

  1. Cook the rice until tender, then let it cool slightly so it holds well for meal prep.
  2. Mix the miso paste, soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic to make the glaze.
  3. Slice the pork tenderloin into medallions and coat them with part of the glaze.
  4. Sear the pork in a hot pan until browned and cooked through, then add the remaining glaze and simmer briefly until sticky.
  5. Steam or roast the broccoli and carrots until just tender, and slice the cucumber and red bell pepper for a fresh crunch.
  6. Divide the rice into containers, top with pork and vegetables, then drizzle any pan sauce over the bowls.
  7. Finish with sesame seeds and sliced green onions before refrigerating.
