Instructions
- Preheat the oven to 190°C and lightly grease a muffin pan or line it with parchment cups.
- Finely chop the onion, carrot, and celery, then cook them in a skillet over medium heat until softened.
- Add the lean ground pork, salt, pepper, and thyme, and cook until the pork is no longer pink, breaking it up well as it cooks.
- In a bowl, whisk together the egg, milk, and maple syrup, then stir in the oats and cheddar cheese.
- Mix the cooked pork and vegetables into the oat mixture until evenly combined.
