Ingredients
- 80 g Apple
- 1 g Black Pepper
- 120 g Brown Rice
- 50 g Carrot
- 160 g Crushed Tomatoes
- 1 g Dried Thyme
- 6 g Garlic
- 180 g Green Cabbage
- 150 g Lean ground pork
- 8 g Olive oil
- 60 g Onion
- 2 g Salt
- 120 g Vegetable broth
Instructions
- Cook the brown rice per the package instructions, preheat the oven to 190°C. Lightly oil a baking dish.
- Cook the onion, carrot, and garlic in olive oil over medium heat until softened.
- Add the lean ground pork, thyme, salt, and black pepper. Cook until the pork is no longer pink, breaking it up as it cooks.
- Stir in the chopped cabbage, apple, crushed tomatoes, and vegetable broth. Cook for a few minutes until the cabbage starts to soften.
- Fold in the cooked brown rice and mix well so everything is evenly combined.
- Transfer the mixture to the baking dish, cover with foil, and bake for 25 minutes.
- Remove the foil and bake for another 10 to 15 minutes until the top is hot and slightly reduced.
- Let cool before portioning into meal-prep containers.
