Ingredients
- 1 g Black Pepper
- 50 g Carrot
- 140 g Cooked turkey breast
- 15 g Dijon mustard
- 120 g English cucumber
- 60 g Greek Yogurt
- 8 g Lemon juice
- 10 g Maple Syrup
- 60 g Red Bell Pepper
- 1 g Salt
- 30 g Spinach
- 90 g Whole Wheat Tortilla
Instructions
- Wash the English cucumber, carrot, and red bell pepper. Thinly slice the cucumber and pepper, then grate the carrot.
- In a bowl, mix the Greek yogurt, Dijon mustard, maple syrup, lemon juice, salt, and black pepper to make the spread.
- Toss the sliced cucumber with a small amount of the spread and half of the spinach to make a crunchy slaw.
- Warm the tortillas briefly in a dry skillet or microwave so they are flexible.
- Spread the sauce over each tortilla, then add turkey, carrot, red bell pepper, remaining spinach, and cucumber slaw.
- Roll the tortillas tightly and cut them in half if desired. Pack with any extra slaw in a meal-prep container.
- Chill before serving for the best flavor, then eat cold or at room temperature.
