Ingredients

  • 1 g Black Pepper
  • 50 g Carrot
  • 140 g Cooked turkey breast
  • 15 g Dijon mustard
  • 120 g English cucumber
  • 60 g Greek Yogurt
  • 8 g Lemon juice
  • 10 g Maple Syrup
  • 60 g Red Bell Pepper
  • 1 g Salt
  • 30 g Spinach
  • 90 g Whole Wheat Tortilla

Instructions

  1. Wash the English cucumber, carrot, and red bell pepper. Thinly slice the cucumber and pepper, then grate the carrot.
  2. In a bowl, mix the Greek yogurt, Dijon mustard, maple syrup, lemon juice, salt, and black pepper to make the spread.
  3. Toss the sliced cucumber with a small amount of the spread and half of the spinach to make a crunchy slaw.
  4. Warm the tortillas briefly in a dry skillet or microwave so they are flexible.
  5. Spread the sauce over each tortilla, then add turkey, carrot, red bell pepper, remaining spinach, and cucumber slaw.
  6. Roll the tortillas tightly and cut them in half if desired. Pack with any extra slaw in a meal-prep container.
  7. Chill before serving for the best flavor, then eat cold or at room temperature.
